New Documentaries in China: A Bite of China

Documentary, as a special category of television show, tries to face to the world, which means it will enter the global market. However, some experts of other countries say that Chinese documentaries have low ideological level, and little narrative thinking, slow pace although China has special angle of shooting, sensitive emotion of people.

However, if directors use a story-telling method to express the culture of food in China, the look of food will be fantastic! Food culture in China indicates different values with different ethnic. It not only focuses on the taste but also notices color and aroma. This means, a good cooker must cook with good look, pleasant smell, and delicious taste.

The cooker is also required an exquisite knife work. For example, many dishes in China have plate decoration made from food. They are graved by a cooker with a little knife. Cookers must experience a long-time training for this to improve their skills. It means a good cooker not only know how to cook but also know how to grave on food.

There are eight styles of cooking in China: Shandong cuisine, Sichuan cuisine, Cantonese cuisine, Fujian cuisine, Jiangsu cuisine, Zhejiang cuisine, Hunan cuisine, and Anhui cuisine. Because people have different dietary habits and the regions have different condition to cultivate food, people classify eight different categories according to the taste and materials.

The documentary A Bite of China tells stories about food with different aspects of food. This show not only introduces the dishes but also talks about the materials cookers pick, the history of the dish, and ceremony of food.

This documentary tells stories not only about food but also about people. Producers indicate the history of the food by telling stories about people who cook and why they cook. There are totally seven episodes of the documentary with different background knowledge of Chinese cooking culture: Nature’s Gift, The Story of Staple Foods, The Inspiration of Transformation, The taste of Time, Secrets of Kitchen, Balancing the Five Tastes, and Our Rural Heritage.
